My favorite banana bread recipe

This is from The Woman's Day Cookbook

1 1/2 Cups flour (it's good with whole wheat flour--healthier, too!)
1/2 cup toasted wheat germ
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup (1 stick) butter, room temp
1/2 cup packed brown sugar
2 large eggs
3 medium ripe bananas, peeled & mashed (1 1/2 cups)
1/2 cup plain low-fat yogurt
1 cup flaked coconut

1. Heat the oven to 350 F. Grease a 9x5-in loaf pan.
2. In a medium-size bowl, mix the flour, wheat germ, baking powder, baking soda, & salt.
3. In a large bowl, beat the butter & sugar with an electric mixer until fluffy. Add the eggs one at a time, beating well after each addition. Beat in the bananas & yogurt until blended.
4. With a rubber spatula, gently stir in the flour mixture just to blend. Stir in the coconut.
5. Scrape the batter into the prepared pan. Bake for about 50 min, or until a toothpick inserted near the center comes out clean. Set the pan on a wire rack to cool for 10 min. Turn the bread out onto the rack and let cool completely before slicing.
